Ingredients

12 small artichoke hearts

4 tbsp olive oil

112 cup chopped onion

1 clove garlic, crushed

5 oz prosciutto, chopped

2 112 lbs (6 medium-size) lamb chops

1)2 to 1 1/2 cups dry white wine

Juice of 1 lemon

8 fresh plum tomatoes, seeded and chopped

Marjoram

Salt

Freshly ground black pepper




Difficulty: 4 | Serves: 6

Directions:

1. Prepare artichokes: cut in half, remove choke. In saucepan heat 2 tbsp oil, briefly sauté artichokes.

2. In another saucepan, heat remaining 2 tbsp oil. Sauté onion, garlic, and prosciutto, until onion turns golden. Add lamb chops, cook 5 minutes, turning. Gradually add 1/2 cup wine.

3. Remove garlic, add lemon juice, tomatoes, marjoram, salt, and pepper, (Add an extra 1/2 cup wine for medium-cooked chops; an extra cup for well-done.) Cook until sauce reduces. 5 minutes before cooking finishes, add artichokes.
