Ingredients

8 cloves garlic

1 cup parsley

5 sprigs rosemary

12 sage leaves

salt

freshly ground black pepper

1 1/2 cups olive oil, plus extra for deep-frying zucchini

1 rack of lamb, cut into chops (allow 3 or 4 chops per serving)

3 small zucchini

4 oz beer

Flour




Difficulty: 4 | Serves: 2

Directions:

1. Finely chop garlic, parsley, rosemary, and sage. Add, with salt

and pepper, to a bowl containing oil. Stir marinade well

2. Reserve ½ cup marinade, add lamb chops, let marinate 15 minutes.

Grill chops, 3 minutes on each side.

3. Prepare fried zucchini: cut zucchini into thin strips. Dip in beer, let rest in flour 3 minutes. Shake off excess flour. Deep-fry 4 minutes.

4. Serve: plate chops, spoon reserved marinade over them, accompanied by zucchini.
