Ingredients

4 lbs fresh plum tomatoes

1 cup olive oil

1 clove garlic, crushed

1 onion, chopped

Salt

Freshly ground black pepper

1 cup basil leaves (optional)

Crushed red pepper flakes (optional)

1/4 cup chopped toasted pecans

Directions:

1. Place tomatoes into a pot of boiling water. Blanch 2 minutes, remove.

Pass tomatoes through a food mill.

2. In a saucepan, heat oil. Sauté garlic and onion until lightly golden.

Add tomatoes, allow liquid to reduce, 25 minutes. 5 minutes before end of

cooking, add basil (if using) and/or red pepper flakes (if using.)
