Ingredients

1 1/2 lbs any fresh vegetables, cut into equal-size dice to facilitate cooking

1/2 cup olive oil

3 cloves garlic, crushed

2 cups chicken broth

1 1/2 lbs capelli

3 oz butter

Freshly ground black pepper

Grated Parmesan cheese

Directions:

1 Heat oil, sauté garlic. Remove garlic when lightly golden Add vegetables, sauté 5 minutes, add chicken broth. Let simmer 20 minutes.

2. Cook pasta until al dente. Drain, add cooked vegetables and butter. Combine thoroughly, add black pepper and sprinkle with cheese.
