Ingredients

1 1/2 lbs ziti

2 tbsp olive oil

1/4 lb bacon, diced

1 cup chopped onion

1 sprig rosemary

Salt

Freshly ground black pepper

1/2 cup white wine

1 egg yolk

Grated Romano cheese


Difficulty: 3 | Serves: 6

Directions:

1 Cook ziti until almost al dente. (Pasta will finish cooking in sauce.)

2. Heat oil, sauté bacon and onion until onion turns golden. Add wine, cook until liquid reduces. Add pasta. Reduce to low flame, add egg yolk and incorporate. Serve, sprinkled with cheese.
