Ingredients

1 lb orechiette pasta

2 lbs broccoli rabe

1/2 cup olive oil

4 cloves garlic, crushed

Crushed red pepper flakes

4 anchovy fillets (optional)

2 cups chicken broth

Grated Romano cheese


Difficulty: 3 | Serves: 4

Directions:

1. Cook orechiette until almost al dente, (Pasta will finish cooking in sauce.)

2. Thoroughly wash broccoli rabe, removing stems.

3. Heat oil, sauté garlic. Add red pepper flakes and anchovies (if using.) Add broccoli rabe and 1 cup broth, Cook 10 minutes.

4. Add pasta and remaining broth, cook, covered, 5 minutes. Serve, sprinkled with cheese and red pepper flakes (if desired.)
