Ingredients

2 Tbsp olive oil

4 cloves garlic minced

1 large Yellow onion chopped

4pcs partially skinned Zucchini cut into cubes

1 can chocken broth

1can diced tomatoes 14.5oz

1cup mixed vegetables

1can sweet pea

1can Catalina beans (optional)

1 tsp garlic powder

1tsp pepper

Difficulty: 2 | Serves: 6

Directions:

1. Broil Rice – Grate Cheese

2. Heat oil in medium size pot and sweat garlic and onions.

3. Add in zucchininand stir for about 10 seconds. Then add in chicken broth, diced tomatoes, mixed vegetables, sweet peas and Catalina Beans if desired. In addition, add garlic powder, garlic salt and pepper.

4. Simmer for 15-20 minutes or until zucchini is cooked (soft and translucent).

5. While the soup is simmering prepare some rice, brown and white.

6. When the soup is ready spoon some rice into a bowl, add some soup and sprinkle some grated cheese over top. Enjoy
