Ingredients

1 quart chicken broth

1/2 lb cooked spinach, water squeezed out, chopped (optional)

5 egg yolks

Freshly ground black pepper

Majoram leaves

Difficulty: 2 | Serves: 4

Directions:

1. Bring broth to a boil, add spinach (if using), cook 2 minutes.

2. Add egg yolks, one at a time, stirring well to prevent eggs forming large clumps.

3. Add pepper a marjoram. Serve
