Ingredients

16 large shrimp

1 clove garlic, minced

1/2 cup olive oil

3 fresh plum tomatoes, chopped

Chopped parsley, for garnish


Difficulty: 2 | Serves: 4

Directions:

1. Place 4 shrimp on each of 4 skewers

2. In a container large enough to hold skewers, place garlic and oil. Place skewers, let shrimp marinate 10 minutes.

3. Pour marinade into saucepan, bring to heat, add tomatoes. Cook 15 minutes over medium heat.

4. While sauce is cooking, grill skewers 7 minutes.

5. Serve shrimp with sauce, garnished with parsley.
