Ingredients

1 lb basil leaves

1/3 lb parsley

2 oz walnuts

3 oz pine nuts

1 tbsp ricotta cheese

1 cup olive oil

1 clove garlic

Salt

Freshly ground black pepper

1 lb boiled potatoes, thinly sliced

1 lb string beans, cooked

1 lb linguine (or trenette)

2 tbsp butter

1 tbsp each grated pecorino and Parmesan cheeses


Difficulty: 2 | Serves: 4

Directions:

1. Place first nine ingredients in a food processor or blender, Process until well combined! (If pesto is too thick, thin with water, preferably pasta cooking water.)

2. Cook pasta until al dente, drain (reserve 2 tbsp cooking water), add pesto, reserved cooking water, and butter. Combine well, top with grated cheeses.
